A few days ago I was complaining to a friend how unpleasant interviews are.  I mean, no one enjoys them.  And my least favorite question of all?  The good ol’ ‘talk to me about your weaknesses’.  It just so happened she’s come up with the perfect response.  My biggest weakness, you ask?  …Chocolate.  Genius, right?  But also so, so true.  And this tart, well this may very well be the reason why that response was invited.  So rich, you only need a tiny slice.  So chocolatey, everything else will pale in comparison.

Second to Christmas, Birthdays happen to be one of my favorite holidays.  Mine, my husbands, my friends…I love celebrating each and every one of them.  Maybe it’s that no celebration better warrants an over-the-top, sky high, sprinkle-crammed, multi-layered birthday cake.  With as many candles as you could possibly cram on top.  My birthday cake is no exception.  Filled with strawberries, chocolate and cream cheese it’s what my cake dreams (and hopefully yours) are made of.

It’s been well documented that fruit and chocolate is one of my favorite flavor combinations.  And this past weekend, I was in dire need of something to lift my spirits.  Because, guys, this weather.  I can’t.  I am SO over it.  So, since the weather continue to refuses to cooperate I dedicated this weekends baking project to me, from me.  It’s almost like when you get to buy yourself a birthday present for yourself (every year, without fail).  It always ends up being your favorite.  And these, these are full of orange zest, dark chocolate, cream cheese and just the right amount of indulgence.

Blood Orange Thyme Layer Cake

My love for blood orange is well documented.  In fact, it was the first recipe I ever posted on Case Bakes.  While most fruit is slim pickings this time of year, blood oranges are the shining star that gets me through these cold, dreary winter months.  Honestly, I think it’s one of nature’s most impressive fruits and the subtle, sweet and slightly less acidic taste it lends finds me buying them on bulk and hunting down any recipe that uses them I can find.  And this layer cake, with it’s hints of thyme may be my new favorite.

Within the month of October, I celebrate six (yes, SIX) family and friends birthdays.  That’s a birthday every 5 days!  So, with birthdays comes great baking responsibilities.  I mean, once everyone learns you have a baking blog the stakes become unimaginably high.  You’re not only making a cake, oh no my friends, you are making a birthday cake.  So, in an ode to all of those family and friends whom I was not able to bake said cake for them to enjoy, for your consideration I give you the most perfect of birthday cakes.  Because sometimes simple – yellow cake, chocolate icing – can be just as spectacular.

Banana Split Cake

IMG_7836We all have it.  That one dessert that instantly transports us back to our youth.  That one dessert that floods you with memories and brings a smile to your face.  Growing up in Texas, it should be of no surprise that mine involves Dairy Queen.  As a kid, Dairy Queen was a magical, magical place.  An endless choice of ice cream confections from shakes you could turn upside down and would somehow, miraculously stay in it’s cup.  Or those perfectly formed chocolate dipped cones.  I still wonder how they did it.  Or my favorite, the pièce de résistance if you will.  Yes, you know where I’m going with this don’t you?  There is always that one dessert, and for me that is the one, the only banana split.   So, it’s about time we make a cake out of it, don’t you think?
